Something sweet for the holidays


Christmas is finally here! The most keenly-awaited holidays of the year and their climax – yes, presents! – are about to arrive! Come on, don’t pretend, we all like receiving presents at this time of year. And everyone’s got a sweet tooth, no matter what they might say! Still don’t know what we’re talking about? Nobody is any doubt that the most generous granddad in Lapland is the expert when it comes to gift-giving, but this year the person with the most surprises will be you. Just imagine everyone’s face when they race to get their presents from under the Christmas tree and find this delicious treat on the table.

With these chocolate and olive oil cakes that we’re about to show you how to make, your success is guaranteed. Without question they’ll be the sweet treat that everyone talks about this Christmas.


Difficulty: medium

Preparation time: 40 minutes, plus 2 hours resting and baking.

Ingredients for 20 cakes:

120 ml Olive Oil from Spain


140 g whole cane sugar

25 g vanilla-flavored sugar

200 g flour

80 g ground hazelnuts

100 g walnuts, halved

100 g cocoa powder

1 tablespoon baking powder

1 pinch salt

6 eggs


Ingredients for the cream:

250 ml very cold whipping cream

200 g icing sugar

2 piping bags

2 piping nozzles, nos. 3 and 12


If you don’t have piping bags or nozzles, you can use two strong, resistant plastic freezer bags. Simply put the cream into one of the pointed corners, roll up the rest and then make a tiny cut across one of the points to let the cream out.

And now, let’s make the cake!


  1. First and foremost: preheat the oven to 180ºC with heat from both above and below.
  2. Start beating the eggs with the olive oil, the cane sugar and the vanilla-flavored sugar.


3. Sift the flour, baking powder and cocoa powder a couple of times.


4. Next, add the ground hazelnuts, walnuts and pinch of salt to the flour mixture. Add this mixture to the eggs and sugar and fold in gently.


5.Grease a cake mold with olive oil and pour in the cake batter.

6. Bake for 20 minutes.

7. Leave to cool.
